Mushroom Soufflé Recipe

While checking in on a table at Via Lago Trattoria, we often get the comment, “This is the most amazing dish!" When it comes out our mushroom soufflé, guests regularly comment on how much they love this appetizer. Even guests that generally don't care for mushrooms,  love this delicious appetizer. Since Mother’s Day is fast approaching, we thought this might be a great spring dish to serve at a brunch or as a wonderful first course for a special dinner with mom. Happy Easter and Happy Spring!

It's official! The days are getting longer, daffodils are blooming and Via Lago Trattoria is planning our ever-popular Easter brunch…it must be spring! On Sunday March 31, the restaurant will be full of families eager to celebrate the holiday at our annual brunch. We love to see the parade of families: the grandparents, aunts, uncles, parents and kids at overflowing tables in their Sunday best. To celebrate Easter, we feature a carving station with peppered filet and brown sugar glazed ham, an omelet and waffle station (think: waffles piled high with whipped cream and strawberries…the kids love that this counts as breakfast!). Next is the salad station complete with four choices, as you can’t eat your chocolate treats without a little green first: cucumber salad, a mixed green, a Caesar and cannellini bean salad.
